Tostones with Tropical Salsa

Traditional tostones are green plantains fried, flattened and fried again until golden and crisp.

To make them more flavourful, I wanted to top them with a simple tropical-style salsa of avocado, prawns and mango.

Plantain is a kind of banana: like bananas, it grows in tropical regions the world over. But compared with an ordinary banana, it's larger, starchier and less sweet.

The tostones recipe is separate: make it first, and spoon the salsa on at the last moment so the crispness holds.

Ingredients

    Instructions

    1. Make the tostones.
    2. Dice the avocado and mango small. Halve any large prawns. Finely chop the coriander.
    3. Put everything into a bowl and dress with the lemon juice.
    4. Spoon a teaspoon of salsa onto each tostone. Eat while fresh.

    Tips

    • Top them at the last moment: the salsa softens tostones within minutes.
    • The lemon juice goes onto the avocado first, to keep it from browning.
    • A barely ripe mango dices better than a very ripe one.
    • A teaspoon per tostone is enough: overloaded, it breaks at the first bite.
