This tahini sauce is very easy to make and calls for very few ingredients.
Not many people know tahini — often only vegans do. But you do not need to belong to any particular
category of eater to love this sauce: it has a fine sesame flavour that sits well alongside a great
many dishes.
Tahini is a paste of ground sesame seeds, and it is not much good eaten on its own. But mixed with other
ingredients — here lime juice, garlic and dill — it turns into a wonderful sauce for salads, raw or
cooked vegetables, hummus and sandwiches.

- In the fridge the sauce stiffens a little: whisk it again with a splash of water or oil before serving.
- Tahini separates in the jar: stir it well before measuring, or the sauce comes out too oily or too dry.
- Add the water little by little and stop at the texture you want — it depends on how thick your tahini is.
- Serve over salads, raw or cooked vegetables, hummus, or in a sandwich.
