Watercress soup

Ingredients

Servings: 4 people

    Instructions

    1. Chop the onions and the garlic.
      Wash the bunches of watercress and cut them in half.
      Peel the potatoes and cut them into chunks.
    2. Heat a little olive oil in a large pot.
      Sweat the onions until they are almost translucent.
      Add the garlic.
      Cook a few minutes more, so the garlic softens and the onion turns golden.
    3. Add the watercress.
      Let it cook until it wilts down a little.
      Add the potatoes, the vegetable stock cube, the salt and the pepper.
      Pour in water until everything is just covered.
    4. Cook for 40 to 45 minutes, until the potatoes are tender.
    5. Blend everything.
      Add 1/2 cup of cream.
      Return to the heat for a few minutes.
    6. Serve hot with homemade croutons and a squeeze of lemon juice.

    Tips

    • Swap the potatoes for sweet potatoes or zucchini for more flavour.
    • Use coconut milk for a richer, silkier version.
    • Add curry for a spicier version, or nutmeg or turmeric.
    • Add fresh herbs such as parsley, mint, cilantro, thyme, tarragon or basil for more flavour.
    • Add nuts or seeds for extra texture and nutrients.
    • Add lemon juice for more punch.
    • Use grated cheese for a richer, creamier version.
    • Add vegetables such as leeks, spinach or squash for more nutrients
    • For a more vegetarian version, replace the vegetable stock cube with mushrooms or chickpeas.
    • Add tofu for a more vegetarian version with more protein.
    • Replace the vegetable stock with bone broth.
    • Add shallots, feta, ...
    • Lovely with croutons.
