Instructions
- Preheat the oven to 180 °C (350 °F) and prepare a muffin tin, either greased or lined with 12 paper liners.
- In a large bowl, stir together the whole wheat flour, rolled oats, sugar, baking powder and salt.
- In another bowl, beat the eggs, then add the oil, milk and vanilla extract. Mix well until smooth.
- Fold the dry ingredients into the wet ingredients and stir just until the batter comes together. Avoid overmixing, or the muffins will turn out tough.
- Gently fold the blueberries into the batter.
- Divide the batter among the muffin cups, filling each one about three-quarters full.
- Bake for about 20 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a rack to cool completely.
