Instructions
- Preheat the oven to 180 °C (350 °F).
- Cook the turkey with the spices of your choice, then cut it into small dice.
- In a bowl, whisk the eggs with the Cheddar, parsley, milk and turkey. Season with salt and pepper.
- Add the celery, broccoli and spring onions.
- Set 12 paper cases into a 12-hole muffin tin. Pour the egg mixture generously into each case.
- Bake for 25 to 30 minutes, or until set.
- Put under the grill for 5 minutes for a golden top.

Tips
- Cook the turkey before folding it in: raw, it would not cook through in 30 minutes of egg.
- Fill the cases generously; the mixture sinks a little as it cools.
- Check the centre is set before going under the grill.
- They freeze in an airtight bag and reheat in a few minutes in the microwave.
- For a vegetarian version, replace the turkey with tofu.
